When I’m baking there are very few times that I use oil when it’s called for. I swap it out with applesauce to save the calories. I’m thinking this recipe might have been one I shouldn’t have swapped out.
I’m only posting this recipe because I want proof that everything I make is NOT perfect every time. lol I guess I needed it for my own humility more than anything else.
This recipe is chocolate. That’s about all it had going for it in my opinion. I notice that the kids have attacked them so they are more than edible or I would have heard complaining.
Because it annoys me to have recipes not work, you can consider this a first test. I shall make it again and change up the recipe below as I go. lol It’s going to need some tweaking though. The cocoa powder is a very different flavor vs. the baking chocolate.
It’s so quick to whip up that I don’t mind working on it. I’m sure the kids won’t care either!
- 1 cup sugar
- 1/2 cup flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/3 cup unsweetened cocoa powder
- 1/2 cup chopped pecans
- 2 eggs
- 1/2 cup applesauce
- 1 tsp vanilla extract
- Preheat oven to 350 degrees.
- Spray 9x9 pan with non-stick cooking spray.
- In a medium bowl, combine all the dry ingredients.
- Add in wet ingredients and mix well.
- Pour into pan and bake for 20-25 minutes.
