The weather predictors say we are in for a hot summer here in Seattle. We’re due for one so I wouldn’t be surprised.
Problem is, I’ve gotten on a baking kick lately. The heat has already gotten in the way of baking whenever I want. I’m in Seattle, it’s not supposed to do that lol
I am NOT complaining about the heat, believe me, I love it. But, I’m going to be working on freezer cooking with the baked goods.
We have a dessert banquet on Monday and who doesn’t want to grab a cupcake from the dessert table?
I don’t usually get adventurous when I decorate cupcakes. My Mom is the cake decorator in the family and loves to do it. I’ve never needed to. But I do know how and I’m feeling like I want to show off.
Hence all the ideas above as I figure out what I want to make.
While I have the oven on, I will be making up at least a double batch of cupcakes. In fact, the weather is supposed to cool down dramatically and I plan on loading up the freezer with baked goods.
Cupcakes freeze really well. Let them cool before freezing. For best results, wait to frost until you thaw them. BUT if you don’t care how the frosting looks, feel free to just slap some on there. Then let it air dry a little so it’s not as sticky. If you are using store bought frosting this step probably won’t make a difference. Homemade frosting will get a nice crust on it as it dries.
But, I’m going the easy route. I’m going to make up a ton of cupcakes and freeze the extra’s unfrosted. I can whip up frosting quick as I pull a few out at a time.
