We’ve had days on end of sunshine here in Seattle. Considering we had 3 times the amount of rain we usually get, in just the first few days of March, it’s a huge change.
Spring in Seattle means no matter what the forecast says, you can’t count on it. I’m doubling up menu ideas and that’s getting old. We just won’t eat soup if the sun is out! I have to have a backup in place.
We always jump to the grill when the sun makes it’s unexpected appearance in the spring. These potatoes are easy to fix. After they’re done cooking, you can split them open and add butter, green onion and bacon and wrap them up again for it to melt together for a quick 5 minutes 😉
