Meatloaf is always a quick option and great to make ahead and freeze. But it doesn’t have to be boring. Serve this dish with a refreshing fruit salad.
- 1 lb lean ground beef
- 1 cup chopped mango
- 1 cup bread crumbs
- 1 egg, beat with a fork
- 1 chopped onion
- salt and pepper to taste
- In a large bowl, put all ingredients and combine with your hands. Don't over work it. When combined, form into a loaf and put in loaf pan.
- Bake in preheated oven at 325 degrees for 55 to 60 minutes.
