I know it’s a day late but I cooked the meal as planned last night and I’m on track for the rest of the week. Camping trips and visiting relatives really threw a wrench in the usual food plans this month. In a good way of course, but just got too be lazy with the planning. Now it’s definitely time to get on track and even start my brain to thinking towards August.
In August I will be putting together a new weekly meal plan full of healthy meals. The current meal plan is generic and typically leans towards the more affordable options. Now you can always make recipes healthier but I’ll set this plan up specifically for lower fat, sodium, etc.
Enough of that, you’ll get the scoop the end of August when they are done being tested.
So this weeks plan:
Tuesday – Steaks, baked potatoes and green beans
Wednesday – sushi. Our version of California rolls. I’ll try to take some pics when we make it and give you my recipe for sushi rice. Hmm, maybe I should do a video for the first time finally?
Thursday – Tamale pie. Again, from the freezer from the previous cooking challenge.
Friday – Spaghetti, I have the sauce in the freezer to thaw.
Saturday – Grilled cod, quinoa, spinach and salads
Sunday – Grilled pork chops, roasted potatoes and veggies
