Well our wrestling season is over and I completely floated through last week. Missed putting up a meal plan because my brain went into a complete fog. This is exactly why I like to freezer cook. It’s not the first time it’s happened to me when we get overwhelmed. I love being able to grab meals from the freezer without having to think.
I still haven’t gotten a good list of the beef left in our freezer. It’s not like it’s that much, I just keep forgetting to do it. I’d like to pull the majority out and make up some meals in the coming weeks. I can’t stand how few freezer meals I have ready to go anymore. I just can’t let it get to fully empty like I was trying to. lol
Hopefully I can get it figured out and cooking on Sunday.

Monday – Hubby is at work so we had leftovers for dinner. Son had steak and eggs with homemade hashbrowns, daughter had some enchiladas and I had fish hubby had made for everyone last night.
Tuesday – Tex Mex corn chowder from week 10 of the meal plans. I need to find a fun roll recipe to serve with it.
Wednesday – Baked potatoes with chili. Love having these. It’s much healthier to load it up with chili and you’ll be able to use less condiments on top.
Thursday – Cheesesteak sandwiches and salads. They are just so easy to whip up and the kids love them. I think hubby and I will be making ours with chicken.
Friday – BBQ Pork sandwiches. I have pulled pork in the freezer already and I’m using Apple Cider BBQ sauce. I’ve decided NOT to buy BBQ sauce any more when it’s so easy to make.
Saturday – I’m leaving the family to fend for themselves without a plan. I have a bachlorette party to attend and it’s at a really nice restaurant.
Sunday – Parmesan chicken tenders from week 20 of the menu plan. I want to make up a big batch of them and some jojo potatoes and get them in the freezer. This meal works perfectly to set up for weekend lunches or days the kids have off from school.
