I know these meal plan posts are popular but for some reason it always seems to be difficult for me to get to them. They aren’t something I do ahead and schedule. I could, but I like to honestly post what our meal plan is going to be.
Last week I snagged what looks like a brand new slow cooker out of my parents storage shed. It’s been in there for years so I know they won’t miss it. Now I have 2 nice 6 qt slow cookers and one 6 qt cooker that is trashed. It’s ugly and has broken handles but everything else still works great. I know I’m a dork cause I got excited thinking of the freezer cooking I can do with that.
I’m big on football. This weekend was an amazing football weekend. Tons of screaming at the tv and some munchies. I actually tried to keep it smaller so I wouldn’t make myself sick with junk. I put a big pot of chili on later Saturday night. It was the first time I’ve ever cooked a meal overnight in the slow cooker. I always leave the chicken stock in there but not something we are planning on having as a meal. This is the only way I’ll be making chili from now on! It turned out perfect and we just about added it to our hashbrown and eggs for breakfast because the house smelled so good.
Sunday was chili and cornbread. The chili cooked for almost 24 hours. I should quickly come up with the recipe this week and the estimated amount of money I spent. Between some good sales on the beef and using dried beans, this 6qt pot of chili was uber cheap. It’s made 3 dinners, 2 of them have gone into the freezer and one serving for hubby to take to work for lunch today.
I got the ground beef buy 1 get one free. I think I’m going to stop and pick up some more and get some meals in the freezer. I have enough to make a few more meals this week but at that price it’s just too good to pass up.
We have 2 wrestling duals this week and a tournament on Saturday. This means BUSY at dinner time. I’m leaving Saturday open to go out to dinner as we never know how late we’ll be there. Although the tournament is close so we could possibly get home earlier than normal. I’m playing that day by ear as to whether I want to throw something in the slow cooker.
Dinners this Week
Moroccan Burgers (making a double batch so one serving goes in freezer)
Stuffed Peppers (again, doubling the batch. Peppers were 2 for $1!)
Smoked Salmon Chowder (I’m going to smoke the salmon tomorrow because the weather is beautiful here this week)
Chicken – haven’t decided if I’ll do oven fried or rotisserie yet
Chicken Pad Thai (I bought two whole chickens so one is getting parted out for this)
I feel the need to come up with breakfast and lunch posts soon. I’m really going to work on more personalized posts in 2013. I realize that no one wants to be “preached” to. Looking back on so many posts this is how I feel I’ve come across. Which is amazing as this is the farthest thing from my personality out there.
I’m getting this post put up quite late. In fact it’s Tuesday on the East coast. We had the Moroccan burgers although they weren’t grilled. I didn’t try to start the coals until around 5 and by 6:45 I gave up. They weren’t lighting. I’m unsure if it’s because it’s so damn cold or if they just decided they didn’t want to light for a girl. I grill a lot so this giving up was a first and I’M ANGRY! lol
However, I got much more than a double batch in the freezer. Daughter prefers turkey burgers also so we ran down to the store after school. I have 6 turkey burgers and 12 beef burgers in the freezer. I’m pretty tempted to send the beef burgers off with hubby to the station for dinner some time this shift. We’ll just have to see how the weather holds out.
Adding his shift days to the mix is a whole new ball game. But truly, I love it when I can send meals for everyone. It can be a lot of work but in my brain it’s worth it. I have a little crazy going on in that department. It started a long time ago when he was still in construction and the guys went crazy over my cooking, especially my sandwiches I’d send in. Then he started working at a smaller station so I cooked often during a set. I even set food up AT the station and would stop by and make sure it was cooking correctly since it was down the street. It’s time to get back to that since they are so busy they have no time to cook. I hate hearing that at 8pm 🙁
