I’ve yet to really get into risotto. The reason is I can’t really eat it. It seems a difficult dish to make without the dairy. It would lose the whole creamy aspect I believe.
This recipe looks so yummy. I think it would be even better with some fresh chantrelle mushrooms. They have a nice buttery flavor.
