Doing the Cook Easy Foodie Blogger Challenge has really helped me focus on meals for the rest of the year. I’ve thought of old recipes I haven’t used recently and found new recipes to try that I know the family is going to enjoy. But there are always going to be the meals you just can’t do without.
We all have at least one meal that the entire family will chow down on. The one that even your picky eaters in the house will cheer when they hear you are making it. That is the meal you MUST keep in your freezer. For those days you know are going to be crazy and you can’t handle hearing a single complaint.
My first favorite meal to keep in the freezer is my white sauce chicken enchiladas. I can make up many trays quickly with an assembly line system on my kitchen island. This is a dish that I’ve sent with hubby to the fire station many times over the years. They can spice it up with a hot sauce but it’s really mild so it won’t tick off those that don’t like it hot. Meal is even easier when I reheat the spanish rice that is included in week 14 of the weekly meal plans.
Then I set up a cooking challenge for myself and found a recipe for chicken encilantrada. I took creative license with it and ran! This recipe has turned into an amazing time saver. It’s quick to thaw and only takes 20 minutes to cook. It makes for easy cleanup because it’s all made in one pot like a paella. Heat up your favorite vegetable or just throw together a side salad and you are done.
If you follow my blog much you’ve probably noticed that I love to use shredded or diced chicken for many recipes. This is because I have food issues and I eat mostly chicken because of it, PLUS whole chickens are inexpensive. I go crazy over recipes that I can use the chicken that I picked off the whole chicken. We love to make rotisserie chicken in our Ronco or some times I’ll toss one in the slow cooker. Either way all parts are used in meals or to make homemade chicken stock.
