Well this challenge is for me but I’m writing it up so you can follow along. That’s how I run most challenges. I’m doing the same on my wellness blog. Taking things I want to accomplish and writing up a post and a challenge for the month or the week. It will help me reach my goals. So here’s the scoop on the freezer challenge I have planned.
My meal planning hasn’t been that great lately and I’m definitely feeling it. Literally. With my food issues, going with last minute meals means I eat things my body doesn’t want to digest and I’m bloated, crampy and in severe pain. Time to get it back under control. Because we know how I love food!
I know a lot of cooking challenges end up being a weekend challenge. I think this probably will be as well, BUT, I am going to get you the info during the week so you can accomplish it on the weekend. Wednesday and Thursday I will be posting recipes. It will probably be late Wednesday as I’m doing my cooking day with the help of my hubby. I want to make sure and get good pics as we cook.
Here’s the plan as it stands right now. I’m cooking up a whole chicken in the slow cooker and we’re also smoking a few pork roasts. I’m all gungho about getting the cooking day started so I have the chicken cooking overnight right now.
I’m making a slow cooker chicken. That gives me 1 meal to freeze right there.
Of course, also making more chicken stock tomorrow with the carcass.
Then with leftover chicken I will make chicken encilantrada. I just found the recipe and I can’t wait to try it. Very easy to mix up and freeze in baggies. I was cooking up some enchiladas for dinner tonight so I sauteed the onions necessary for this recipe already. Tomorrow when the chicken is done I’ll just be combining ingredients right in the freezer bags. I’m planning on making 2 or 3 batches of this recipe depending on how much chicken I have left over.
Then I have 3 small pork roasts that I rubbed down tonight and set in the fridge. I will set them out first thing in the morning to get closer to room temperature before hitting the smoker. Dinner tomorrow is going to be pulled pork sandwiches and salads. Have to take advantage of that fresh pulled pork we’ll be smelling all day. Now the pork is not something on my food plan but it doesn’t bother me to cook my own separate food some days if I didn’t have to cook the families as well 😉
With leftovers I will be making 2 tamale pies and I’m unsure if there will be another recipe. I may just put any shredded pork left in freezer bags. We’ll see how much pork is left.
I’m not doing this to fill the freezer. It’s to get me back into some better habits. I haven’t done a full blown cook day in quite a while. I love doing it. It’s a challenge to see how much I can get done. I need to get a day of all this cooking again so I remember how much fun it is for me. Lots of work, yes. But I’m a dork and think it’s fun.
