This is a very quick recipe. I do prefer to use dried black beans for the recipe because there isn’t the extra salt added like in the canned variety. Just make sure and soak the beans for a minimum of 24 hours before. Or I keep pre-soaked beans in the freezer so I can pull them out for recipes. Also, do NOT add the salt to the recipe while cooking. The sodium stops the cooking process in the beans and they won’t cook.
I like to serve this with rice. I put a little rice in a bowl and pour the soup over it.
Since this recipe has so few ingredients it’s a great starting point for a recipe. Some things to think of adding are: chicken, corn, or okra. Of course, this dish would be great with cornbread or biscuits.
- 2 cans (15 oz size) black beans, drained and rinsed or 1.5 pound black beans, soaked for 24 hours
- 2 andouille sausages, cut into bite size pieces
- 1 can (15 oz) fire roasted diced tomatoes with garlic
- 4 cups chicken broth
- salt and pepper to taste
- Combine all in crockpot. Set heat to Low and cook covered for 5 to 6 hours.
