My Mom makes the most amazing sugar cookies. I prefer them before she frosts them! Now I don’t have her exact recipe and goodness, I’m not sure I want it or I’d make them too often for my health. But I know it’s just not the holidays if I don’t get my plate of cookies from Mom.
Home-baked goodies are an awesome and appreciated gift. But they can definitely save your sanity if you plan ahead. Right now is a great time to get to whipping up some cookies and freezing them. You can decorate them right before gift time to keep the frosting fresh.
Sugar cookies can be cut out to many different shapes. Just remember if you are going to freeze them that you set them some place in the freezer that they won’t be squished or bumped a lot and broken.
Easy Sugar Cookies
3 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened (room temp)
1 1/2 cups sugar
2 eggs (set out to warm with butter)
2 teaspoons vanilla
1. In medium bowl, combine flour, baking powder and salt and set aside.
2. Cream together butter and sugar.
3. Beat eggs one at a time into butter/sugar mixture and then add vanilla.
4. Gradually add flour mixture until well blended.
5. Cover and keep in the refrigerator for about 2 hours.
Preheat oven to 350. Roll out dough onto a lightly floured surface. Cut out into shapes and place on non-stick cookie sheets. Bake 6-8 minutes or until very lightly browned. Remove from cookie sheets and cool on wire rack.
