Better late than never. However, this is still going to be a very harried post.
If you are on the facebook page then you read that I wasn’t putting up a menu plan for last week. I had no need. We spent most of it at one or the other set of in-laws. Our weather came out awesome for once during spring break and we ended up having burgers two days in a row lol I’m not cooking, so I’m not complaining! Thankfully we had potato salad at Mom’s house and macaroni salad with them at Dad’s. lol
So last week wasn’t up to me and when we got home I pulled items from the freezer. My daughter had to stay home because of work so my kitchen was spotless when I got home. Be jealous people, it’s pretty awesome when she gets bored and cleans.
Now this week I’m still trying to get in a groove. I’ve got posts written up to go out but for some reason I’m way behind on the menu planning. I’m supposed to be coming up with some bulk cooking to do and yet here it is, the 10th already and I haven’t gone grocery shopping. Umm, yes, this is where I have to buckle down. If I don’t then we’ll spend a ton of money on groceries and we’ll eat out much more than is healthy.
So the plan for the week:
Monday was Moroccan burgers for the boys and my daughter and I had chicken burgers. I made macaroni salad as this was said to be our last good day of sunshine until August. lol
Tuesday was leftovers. I had the perfect amount of pasta left to fill the kids up. I added cheese to it and heated it up. I had fish tacos with the leftover fish I baked on Sunday. Hubby was at work so leftovers are pretty typical when that happens.
Friday, I’m pushing for everyone to take care of themselves. We have a good friends bday to go out to celebrate at Dirty Oscars Annex or DOA as they like to say. We’ve never been there and the menu is nothing that I can eat as it stands online but it looks AWESOME! It’s morbidly appropriately to go here for dinner because it’s all a bunch of firefighters and their wives going. The days between are in the fridge thawing now but I don’t know what day they will be served. I got them out last night as I was writing this post. It’s supposed to rain forever now but we’ll see. Weather in the Seattle area is bipolar so if they call for rain in Seattle, then we just south and in the foothills may have nothing but blue skies. lol Our weather is the hardest to predict, just ask them. Do your weather people say that too?
I cooked down a ham bone in a roaster because it was too big to go into a crockpot or any of my stove pots. I mean it was HUGE. I would have had to overflow my roaster to get the water to cover it. But I cooked it down for about 6 hours and it broke in half. I’m going to put the bone in the crockpot with the beans to make soup and store the broth I made for odd recipes. I know it’s a stock that will need special recipes or it will ruin them. But lets just see what happens. I made a ton of stock by cooking this damn bone down.
The other random recipes going on this week are:
Hearty Bean Soup – not a regular ham and bean soup I grew up with as no one in my family seems to eat that. I’m going to work on a recipe that is more like a minestrone style. I’m looking forward to seeing how this recipe turns out. Gotta love a mystery. Honestly, I have no idea exactly what I’m putting into it as of writing this.
Chicken pot pie – from week 11. It’s the last one in my freezer OMG!
Baked pork tenderloins – not made ahead, I’ll just bake or broil these the day off with some Montreal steak seasoning. I took out leftover broccoli, chicken and rice as a sidedish. I’m super glad I froze the leftovers when I saw there was enough for 3!
Steaks – again, no recipe. It’s going to take a couple of days to thaw which means we’ll have them this weekend. If the weather is nice then we’ll grill, if not then we’ll broil. I’ll serve them with baked potatoes I think and salads, just to keep it simple.
There it is. 7 days of meals planned out and not a single trip to the grocery store necessary. However, I may have to hit the produce stand to grab some more veggies. I’m really trying to get the fridge and freezer emptied out. This includes the obscure items in the veggie drawer before they go bad and the frozen veggies that were a killer deal but just sit there.
