Yes, the challenge didn’t go so well and I’m behind on posts. I made the choice to not stress myself out and toss up crappy posts just to get them done. I’ll be behind but I’ll work on getting the topics done. I figured you’d rather have quality posts to read.
Why so busy? My daughter graduates this week. On Friday to be exact and her huge graduation party is Saturday. Now it’s also the beginning of the month which usually means doing some freezer cooking but I’m just going to have to keep that at a minimum because my brain isn’t working at full capacity.
I’ll also be working on making dishes ahead for our big party so I’m going to have to incorporate that into what I’m making during the week. In other words, I’m planning leftovers to create other dishes. For example, my baked beans call for shredded smoked pork or beef. My freezer is empty right now so I’ll be making shredded sandwiches for dinner this week in order to have some to put in the beans on Saturday.
Here’s the meal plan for the week:
Monday – burritos and tacos. I have to use up the leftovers in the fridge so there’s room for party food.
Tuesday – Burgers
Wednesday – grilled steak kabobs, red potatoes and salad
Thursday– shredded beef or pork sandwiches (depending on what I find on sale), macaroni salad and green salads.
Friday – This is graduation night. I’m kind of leaning towards sub sandwiches so everyone can eat whenever. This day is still up in the air as I’ll be cooking most of the food for the party and basically be out of my mind.
Saturday – Beef brisket, hot dogs, macaroni salad (yes, made on Thursday), baked beans in the crock pot, cheesy potatoes, frog eye salad, hummus/veggie platter and cupcakes. At least that’s the menu right now. Side dishes could change or be added to. I need to go do a head count of rsvp’s again.
Sunday – It will definitely be leftovers as we recoup from the party.
I’m getting better at remembering to take pictures of foods when I make them. Especially new recipes. On Saturday we had a last minute trip out to friends house for dinner and I really didn’t want to go to the store, nor did I want to come up with anything difficult to make.
I hit the cupboards and came up with enough ingredients to make an amazing Asian pasta salad. Yep, got a pic of it so I’ll be posting that this week. It’s light, flavorful and perfect to go with your summer grilling.
I’ll try to get pictures of more food I make this week, as it’s all pretty regular summer fare at our house. Since it’s recipes we use almost weekly I really don’t think of posting them. Many of them are recipes I’ve made since I was little and I don’t even have a recipe. I just go by sight and taste. Which means I’ll have to pay more attention to how I make the recipes AND take pics.
