I’ve been so good about getting recipes and articles up the last 2 years and then bam. Well in my defense I’ve done a TON of cooking in the last week. To the point I got a little, ok a lot, tired of cooking. That didn’t feel good at all. However, having 2 full freezers does feel good.
I didn’t come up with more pork recipes so I just froze them in appropriate meal portions. I just lost all creative brain power at that point. it will give us something to grill or if I come across a new recipe to try. I did that with a family pack of steaks also. Which was perfect since we grilled them last night. The weather has been amazing here this weekend and we had to take advantage of it.
I think it’s more difficult to come up with a weekly meal plan to post when I’ve got so many to choose from. I don’t have to come up with a plan, I can have the family pick a meal and grab it out to thaw. But hubby is at work a couple of nights this week so I know I’ll have some of the dishes for the kids that they love more.
I just looked at the forecast for the week and surprisingly it says rain all week. I’d never expect that in March in Seattle.
Tentatively the meal plan is:
- Sloppy Joes – I’m working on a new ebook and the recipe is in there 😉
- Chicken Pot Pie – from week 11 of the menu plans
- Penne Pasta w/spaghetti sauce
- Teriyaki Pork Steaks – I think I’ll stir fry veggies to go with it and then cook up the tofu for myself.
- Tamale Pie
Honestly, I think I’m just going to leave it at that. I know it’s not the full week but the best part of freezer cooking is being able to make decisions one or two days before on what to eat. I might pull some fish out to bake. We’ll just have to see.
