I think I have this week under control. I already have things taken out of the freezer to thaw and talked to hubby about what some things were he wanted to eat. I swear that’s half the battle. Really folks, I have everything written on a piece of paper on the freezer. Can you just go figure out ONE item from that list that you would like to eat during the week?
That would be 3 meals right there and I’d only have to guess at what everyone wants to eat the other 4 nights. Help me out family! lol
I don’t know about you but any time I go to the grocery store I check out the clearance section for meat. It’s kind of become an obsession. What awesome deal can I find and then what can I combine it with from the freezer already to make a totally different meal?
On Saturday there were a ton of good deals. I had to hold myself back. I did a ton of cooking this month and buying more means I’m not saving as much as I’d like. However, I scored extra small oysters and the panko crusted chicken breasts for half off. The extra smalls are never in the clearance section so I can’t wait to have them on Tuesday. The panko crusted chicken breasts are an awesome lazy meal. There is no flavor on them so you need to combine them with something else. I love to fry them up for the kids on nights hubby is working. Each package has 2 chicken breasts and I can’t eat fried foods so it’s perfect.
I’d already been planning on having spaghetti so this changes up that meal a bit and makes it for even further. I’ll fry up the chicken and melt some cheese on it. Reheat the spaghetti sauce and make some noodles and a veggie. Kids meal is complete with very little work and looks like I slaved over it.
The oysters will be sauteed with spinach and onions. I’m unsure about the sides right now. The kids don’t care for oysters so I’ll thaw the clams out that my daughter and her bf’s family got a week ago and make some clam chowder also. We’ll have a seafood fest of sorts. Two meals down and oh so little effort!
As you’ll see, some things are overlapping from last week. It’s not that we’re having them two weeks in a row, it’s that my family actually looked at the list on the freezer and chose something else! YEAH!!! This week I’m not giving the option. It’s giving me a headache. I’m already thawing a lot of this out to cook this week.
Meal plan for this week is:
- Chicken parmigiana w/spaghetti – using the beef spaghetti sauce I made up at the beginning of the month
- Sauteed oysters and clam chowder – hoping there will still be bacon. I guess I better get the last package out of the freezer and hide it lol
- Tamale Pie and side salads
- Baked white fish – recipe to follow as I’m using some spice packets that I won in a giveaway. It’s a local company and the spice mixes are incredibly fresh.
- Teriyaki pork steaks w/fried rice
- BBQ beef sandwiches – yikes, this shredded beef has no date on it in the freezer! Total no-no
- Oven baked chicken
Look at how many new recipes I SHOULD be writing up. My biggest issue is remembering to take pictures. I’m horrible at remembering to do that. I’m making a huge mental note to take pictures of all the new-to-the-site recipes I’m making this week.
