If you are on the facebook fanpage then you know that I spent most of Saturday freezer cooking. I’d ran 6 miles in the morning and then had to stop at the store for a couple of other things so I got a later start than I wanted. It also means that I ran out of energy for the second 4 hours of my cooking.
Even my first 4 hours were not as quick as normal. Rats! So for my 8 hours I got 14 meals. Again, that was because I just couldn’t stay on my feet the entire time. It was only 8 hours because after 6 I still had to put the spaghetti sauce in baggies. All total I only spent 4 or 5 hours cooking and that was at a leisurely pace.
I still have a bunch more meals to cook up and that has to happen today. Either that or I have to freeze the meat. I’d rather freeze it as a meal!
This weeks cooking has special significance for me. Our neighbor and friend is going through chemo and radiation. He still has a few weeks to go. Instead of cooking extra on any given day and walking it over, I’m working on freezer cooking for both our houses. I was really happy to take over 5 dinners for him and his family today and then walk over some chicken salad for him to eat when he feels better in the next couple of days. He told me how much he loved it last week so how can a girl say no? 😉
Unfortunately I didn’t know that he shouldn’t have red meat so I’ve labeled things appropriately so others can eat them. The beef dishes were what was on my agenda first on Saturday when I cooked. I’ll be working on pork and chicken dishes next. That’s what was on the menu plan anyway. Now to get to it.
The meal plan for this week as of right now:
- Chicken, broccoli, rice bake. It turned out quite well but still needs tweaking. It was the first time I’d ever tried making it and didn’t use a recipe. It was ok but seemed a little bland in my opinion.
- Pork fried rice
- Rotisserie chicken I love our Ronco Showtime Rotisserie so we can make this at home for inexpensive and way less sodium.
- Moroccan burgers. (from week 15 of menu plans) Just waiting to see if the weekends supposed to be nice!
- Chicken enchiladas w/white sauce.
- Confetti meatloaf (from week 6 of menu plans)
Some of this plan is up in the air depending on what dishes I come up with while eating breakfast. I’m making the confetti meatloaf because I had more beef left than I thought I would, but I still haven’t come up with enough pork recipes. We got a good deal on pork and it’s not something we eat a lot of unless it’s a roast. Off to look at the menu plans to see what I can dig up.
